Baked Brown Bread Recipe
Boston Molasses Recipes, 1920s

2 cups graham flour
2 cups all-purpose flour
1 cup molasses
2 cups [sour] milk
1 egg
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder

 

Sift the all-purpose flour 3 times with the baking soda, salt, and baking powder. Beat the egg well, beat in molasses, and add milk. Mix the graham flour with the other dry ingredients. Pour liquids into it. Stir only until flour is dampened. (One cup raisons may be added if desired.) Turn into large loaf pan and bake in moderately hot oven 375 degrees Fahrenheit for about 1 hour.

Brown breads are a traditional favorite with Boston Baked Beans. Today, maple syrup is often substituted for molasses.
