New England Salt Cod Fish Recipe

2 pounds boneless salt codfish
2 pounds small potatoes
1/4 pound salt pork
16 small onions
12 raw beets
2 cups white sauce
2 hard boiled eggs chopped
Soak boneless salt codfish 12 hours in cold water, changing water three times. Set on fire and bring slowly to a boil for about five minutes. Take off and put into cold water again. Place in saute pan with piece of fresh butter and half pint of cream or milk, let boil, thicken with a cream sauce. Cut pork in thin slices, crisp in oven or frying pan. Cook vegetables separately. Place fish on platter and cover with sauce. Sprinkle eggs over the top. Garnish platter with pork and vegetables by grouping, placing beets at both ends, potatoes front and back, and the onions between with pork strips. Will serve about eight.
