For "New England Style" haddock fillet, wash and wipe dry Sterling fillets, season, roll in flour or corn starch, saute in frying pan with clarified butter, about fifteen minutes for a nice color. Garnish with parsley dust, add lemon juice to gravy and pour over dish.
