Spiced Yuletide Punch Recipe
(30 servings)
1/2 teaspoon nutmeg
2 teaspoons cinnamon
1 teaspoon ginger
1/4 teaspoon cloves
1 teaspoon allspice
1/2 cup water
4 quarts wine, dry red or white
4 cups sugar
14 egg yolks, well beaten
14 egg whites, beaten stiff
Mix nutmeg, cinnamon, ginger, cloves, allspice, and water.
Bring to boil, then simmer for 5 minutes. Add wine (Claret, Burgundy,
Sauterne, or Rhine) and heat to simmering. Remove from heat and stir in
sugar, stirring until dissolved. Fold egg yolks into egg whites and place in
punch bowl. Pour in heated wine and and whip until frothy.
